    Default Carrot Cake Recipe

    Does anyone have a home made carrot cake recipe? Every single recipe I try comes out like a bread rather then a cake. I would buy a cake mix...but ill get sick, so home made it is. Thanx in advance!

    I've got one, but I'm a purist and it's just carrots and nuts...no pineapple, coconut, raisins, or other weirdness. If you'd like the recipe, I can pm it to you a bit later. I'd have to type it up (it's my mom's recipe and it's handwritten in my personal cookbook) before sending it, but I've got to do some work w/DD first. Oh yeah, this one has a cream cheese frosting. Think it's what you're looking for?

    I make one from Allrecipes.com. I can send you a link if you'd like. I do change the icing a bit, I don't put any syrup in it.

    Sorry to laugh at your troubles, but that's a first...never seen a computer do that before. Is something stuck in your 'enter' key on the keyboard??

    Mmm...that sounds like mine, also from my mom. Also handwritten. .

    DH likes carrot cake but can never have it because people insist on contaminating it with coconut, which he's terribly allergic to. And ugh to the pineapple put in there--sorry to those who like it, but it's...weird. Just weird. Like putting mango in a chocolate cake--why muddle up a perfectly good thing?

    im good with carrot, all spice and cinnamon. I can do with out the extras. Makes it taste funny, and the texture isn't right.

    No worries...I hve to laugh wn it happens. When I come tothis sitei have to g back nd make corrections othwiseit looks ike tis or above. LOL.

    Truly our best-ever carrot cake recipe, make this classic favorite for a crowd and you might not have any leftovers to bring home.

    Ingredients

    2 cups all-purpose flour
    2 teaspoons baking soda
    1/2 teaspoon salt
    2 teaspoons ground cinnamon
    3 large eggs
    2 cups sugar
    3/4 cup vegetable oil
    3/4 cup buttermilk
    2 teaspoons vanilla extract
    2 cups grated carrot
    1 (8-ounce) can crushed pineapple, drained
    1 (3 1/2-ounce) can flaked coconut
    1 cup chopped pecans or walnuts

    Preparation

    Line 3 (9-inch) round cakepans with wax paper; lightly grease and flour wax paper. Set pans aside.

    Stir together first 4 ingredients.

    Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cakepans.

    Bake at 350 for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Drizzle Buttermilk Glaze evenly over layers; cool in pans on wire racks 15 minutes. Remove from pans, and cool completely on wire racks. Spread Cream Cheese Frosting between layers and on top and sides of cake.
