OMG, I am just beyond estatic today !!! My little Emma is anaphlyactic to Eggs and Cows Milk. I have tried for 2 years to make a cake that tastes good and doesn't fall apart under the weight of icing !!!!!!! Today I did !!!!

It is Quince's birthday tomorrow !! But Emma has her own little cake that she can EAT !!! I have literally tried 100 recipes. It tastes great !!! It is kind of crunchy on the top layer but moist and soft in the middle !! It didn't fall apart when I put the homemade icing on it. I AM SO HAPPY !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Depression Cake

1.5 c flour
3 Tb cocoa powder (optional)
1 c sugar
1 tsp baking soda
1/2 tsp vinegar
5 Tb oil
1 tsp vanilla
1 c water

oven 350 degrees. combine ingredients and pour into greased 8" or 9" square pan. bake in oven until done, about 35 minutes.

Back to your regular chit chat now. I just had to rave !!!

Congratulations! Sounds like you have your culinary adventures set out for you.

For more cake recipes, can I suggest The Garden of Vegan? Also, lots of cakes and goodies can use egg substitute (either the weird refrigerated kind, or applesauce, tofu, etc) and soy or rice milk instead of the egg and dairy. The book Raising Vegetarian Children is another good resource, and of course the bookstores and internet are full of good (finally) vegan recipes.

I just might try your cake recipe and my kids don't have any allergies, lol. I like simple recipes!

It was so simple, mixed it by hand, and threw it in the oven. Never made an easier cake.

Throw a tiny bit of cayenne pepper in that chocolate cake recipe and you've got a great Mexican chocolate cake for Day of the Dead or Cinco de Mayo. :)

I've been making this chocolate cake (http://www.realsimple.com/food-recipes/browse-all-recipes/mexican-chocolate-cake-10000000640884/index.html) for years (with and without the cayenne), as eggs are a trigger food for me, and Jazz was very allergic when he was little. He eats them every morning for the two weeks he has summer camp each summer, now though--so maybe there is hope of your little one growing out of her allergies, Jana. Crossing my fingers for you!

Now if anyone can make a vegan key lime pie without eggs OR soy (another of my trigger foods--the worst one), please let me know! My favorite dessert, and I haven't had it for a couple of decades now.

Christina that looks awesome !! I will have to try it very soon.

I hope she will someday outgrow it. My pediatrician thinks it is a slim possibility though. As her reaction was the fastest and worst that our local children's hospital had ever seen. The allergy specialist actually got scared they said. He has exempted her from any and all vaccinations that are even grown in eggs, which are supposed to be safe even for children who have egg allergies. She reacts even if she touches milk that is unseen, like spilled on a table and not cleaned with bleach.

I hope someday she will outgrow it !! I can't imagine going your whole life and not eating ice cream, a grilled cheese sandwich, even mac and cheese LOL. Never enjoying eggs benedict. Wow, it makes me sad.

I'm going to have to try this, too. It just sounds so easy but I'm sure I'll have to double the ingredients as it certainly wouldn't last very long around here! I think Mitchell and Michael are both going through growth spurts. I'm surprised they didn't jump out of the truck today to eat roadkill.

:D Oh ! I remember teens, been a while LOL. My freezer has been full for almost 2 years. Shocking !!

Michael's only 5 and Mitchell's almost 8 but I swear they're eating like teens lately. It makes me fear for our freezer when they really are teens!

I'm glad you found a good recipe. You should be able to substitute for the eggs & milk in regular recipes, though. Applesauce, bananas, & tofu can replace eggs in baked goods & you could use a non-dairy milk(Soy, Rice, Almond). Almond milk has a sweet taste to it & would probably be quite good in cake.

So glad for you and your daughter! It can be so disappointing to not be able to eat what everyone else is eating and to feel left out because of allergies. That's great news.

Congratulations!!

My son's allergic to dairy and has anaphylaxis to cashews (avoid all tree nuts and peanuts and sesame).
Losing baking was really tough for me.

I have a lot of allergies, but none ana . . whatever. None serious! But I have to be gluten-free and free of a lot of other things, so i'm not even sure how i'd sub for egg without subbing for gluten lol! However, after a year without dairy, my boys love various vegan cheese substitutes. I make an AWESOME gfcf pizza using vegan gourmet cheese, i've made a vegan mac-n-cheese which uses nutritional yeast. They like grilled cheese with vegan slices, and there are lots of brands of soy ice cream - although I make my own because i'm allergic to the thickeners used in almost all of them, and I cant find the tofutti brand any more - except the cuties, which arent gluten-free. There are LOTS of great foods without dairy!

Oh, and you HAVE to try the chocolate tofu pie recipe on Whole Food's website . .. unbelieveable! Absolutely tastes like a chocolate cream pie, even my non-allergic family members fight over it!
