View Full Version : Cinnamon Muffin Cookies Recipe (Sneaky Chef)

She actually calls these 'Breakfast Cookies' but I call them Cinnamon Muffin cookies and my picky, picky son LOVES them. Hooray! You have to sprinkle the tops with sugar and cinnamon or they will not be sweet enough for your picky eaters. I also use cottage cheese instead of ricotta.

I've been looking for some quick breakfast ideas. Thanks for sharing this one. I have several boxes of Special K Red Berries that no one will eat. Do you think it would work in these?

I bet they would. I would use them myself, but my son would never eat them with those in there, lol. Yes, he is that picky! ugh! lol

I can't eat dairy so I wonder if there's something I can sub for the cheese. Tofu is often used but I can't eat soy either! Is it just for the moisture? Applesauce maybe?

You could try! I try to avoid soy, too after reading this, but it's really in EVERYTHING, ugh:

I try to avoid dairy, too, just trying to overhaul many things in my diet, but it's easier said than done. It's a process, I keep telling myself, baby steps :) My kids and husband still drink milk though and we buy organic at $6/gallon, yikes!
