250g plain flour
2 tbs cocoa
2tsp baking powder
1/2 tsp bicarb
100g soft butter
200g caster sugar
1tbs red food colouring paste
2tsp vanilla
2 eggs
175ml buttermilk
1 tsp lemon juice

Preheat oven to 170C. Line muffin tins with silicone pans.
Combine flour, cocoa, baking powder and bicarb in one bowl.
In another, cream butter, sugar, vanilla and food colouring.
Mix in 1 tbs dried ingred and 1 egg. Repeat.
Add the rest of the dry ingred.
Beat in buttermilk and lemon juice.

Divide between 20 -24 muffin cases. Bake 20 min approx.

Cream Cheese Frosting

500g icing sugar
125g cream cheese
125g soft butter
1 tsp lemon juice
chocolate sprinkles

Sift icing sugar. Add cream cheese and butter and mix. Pour in lemon juice and mix till smooth. Ice each cupcake and top with sprinkles.
