I'm making these tonight to go with leftover dahl and thought I'd share the recipe.

2 cups potato, mashed
1/4 cup milk
1 tbsp oil
2 cups plain white flour
1/4 tsp salt

Mix together potatoes, milk and oil. With a wooden spoon beat in the flour to make a soft but not sticky dough. Cover and stand for 30 min. Cut into 12 portions. roll out each to 18cm round. Heat pan and fry both sides. ( no oil needed )

Quick and delish.

Sounds yummy! Breads like this always stick horribly for me--any suggestions? I'm seriously thinking of getting a griddle, instead of using a frying pan.

I just use plenty of flour when I'm rolling out - it is a sticky dough - and then they don't stick in the pan. I just use a regular frying pan. You do have to wipe out the flour from the pan every few flatbreads. HTH!

Have you tried these with wholegrain flour Melissa?

No, but I'm sure they'd come out fine. Maybe start off with half and half ?

Yeah I normally ease into it, although with pancakes the kids won't tolerate anymore than half half, thanks

I think adding some chives or green onions might be an interesting extra as well...?
