My kids named this one. This is not an everyday potato dish. I made this for Christmas when MIL asked me to bring a potato dish for dinner. Can be made in smaller amounts, just adjust measurements. Sorry, since I made this one up on the fly, I don't have exact measurements.

5lbs potatoes - I used red, but yellow would work, too
small container of sour cream
buttermilk
butter
leeks - thinly sliced
bacon - chopped & cooked
bag of shredded cheddar
brie - roughly 4-6 oz
chicken broth (optional)
garlic

Slice & boil potatoes. Drain & put in casserole dish.
In pot, sautee leeks & garlic in butter. Add sour cream & buttermilk. stir. Add brie & let it melt. Stir. Add whole bag of cheddar & let melt. Stir. If desire more sauce or thinner sauce, add some chicken broth. Pour sauce over potatoes. Season with pepper & salt to taste. Place lid on casserole & put in oven.

Bake at 350 for about 30 minutes, add cooked chopped bacon, continue cooking for another 30 minutes.

Yes it is, but it tastes fantastic! My son hates potatoes. He'll eat fries & tater tots, but that's it. He won't eat mashed, baked, boiled, fried, grilled potatoes, etc. He's always been like that. However, I got him to try these potatoes & he loves them. My no potato boy will actually eat these willingly & without a complaint. They are a bit rich, but a few times a year I'll be able to get him to eat potatoes without a fight. That's worth an extra workout or two. :)

BAHAW I just had to see the recipe for Potatoes of Awesomeness;) Sounds like totally the right description for you recipe!
