It happens every year. We have just cleaned out the freezer of all of our winter meals. We are now preparing for the more summer meals, but I am stuck. None of what I remember is exciting and I lost my list of meals that I have been using for a few years. (I think I lost it in a computer crash.)

At this time of year we go back and forth with hot and cold meals, depending the weather.We have started to BBQ and eat some salads. We are finally getting some decent produce in now.

I am looking for inspiration. There are no real dietary issues, nor does it have to be kid friendly, since DS won't eat any of it. But nothing too complicated. I think I will be doing more of the cooking and I am not that talented. ;)

What do you like to prepare this time of year?

Skipping the marinade (chicken not thawed in time), and using lemon juice not fresh lemons. And I add rosemary because we have a lot of rosemary bushes. Sometimes I will add potatoes and carrots, leave out the lemon....

We are also doing a lot of braised chicken in sauce, chicken breast pieces in simmer sauces, and other somewhat ethnic but not really recipes.

Pioneer Womans Chicken salad recipe is my base, but I really like that when I can harvest fresh dill. Even my picky boys eat it, and somehow it usually makes dinner for the family, and a couple days of lunch for me and the boys.

For me, the important thing in her recipe is the sauce, which she offers a bunch of variations based on what you have on hand.... use yogurt or sour cream, deoending on whats onhand.)

Maybe a good time to do a cheap Blue Apron trial? Or Hello Fresh? I feel like I couldn't justify the costs on them... but I really have enjoyed trying all the meal services when they're free or cheap. And then my meals get a little invigorated for a couple of weeks after.

I'm just going to give you a list of things I eat fairly often, sorry if it gets messy . . .

This stuff keeps well in the fridge. I make a batch of it on the weekend and eat it through the week (links added if I like a particular recipe)

Jerusalem salad (https://myjerusalemkitchen.com/2016/02/16/israeli-salad-with-tehina/) I only mix the dressing into the portion I'm going to eat that meal vs. dumping into the whole salad. I use less mint than this one calls for. Sometimes I mix in farro and chickpeas if I'm eating it as a main dish.

I make a beet and carrot salad that I really enjoy and beets are not my favorite. I've modified the original recipe so much that I won't bother to link it (you can find the original on Cookie and Kate, the vinaigrette is the same). Grate one medium size beet and one large carrot. Mix in 1.5 cups cooked farro or quinoa and 1/3 -1/2 cup sliced toasted almonds. In a separate bowl, mix up the vinaigrette 3TBS apple cider vinegar, 2 TBS lime juice, 2 TBS olive oil, 2 TBS honey, 1 tea Dijon mustard, salt and pepper. Mix vinaigrette and beet salad together. In a bowl place 1-2 cups of baby spinach, top with some of beet salad and a little bit of soft goat cheese.

Greek green beans (http://allrecipes.com/recipe/73470/greek-green-beans/) *drool* one of my favorites and I'll eat it as a main dish with chunks of feta. Add some oregano and have some crusty bread on hand. I'm pretty sure I only use 1/2 cup of oil in this max. I use canned tomatoes all the time vs. fresh and it works just fine with frozen green beans.

Shakshuka (http://toriavey.com/toris-kitchen/2010/07/summer-2010-travel-blog-shakshuka/) which sounds so bleh just reading the recipe, but is quite tasty. It reminds me of the Greek green beans.

I've yet to find a recipe in America's Test Kitchen Mediterranean cookbook that I don't like. Imo, it was well worth the $15 I paid, despite being able to get so much for free on the internet. Lots of fairly quick to prepare, whole grain, veggie heavy recipes.

Quiches are one of my spring faves, and even souffles. Here's the one we had tonight that is super easy, feeds four, and is made in a single pie plate...

Broccoli Cottage Bake
Serves 4

16 ounces cottage cheese, low fat
1 (10 ounce) package frozen broccoli /1 bunch fresh broccoli, chopped (thawed)
3/4 cup grated cheddar cheese
1 small jar pimientos (or 1 small red pepper, finely chopped)
4 eggs, beaten
3 tablespoons parmesan cheese
3 tablespoons breadcrumbs

1 Mix everything.
2 Pour into a 9" pie plate sprayed with no stick spray.
3 Bake at 350 F 45 minute until set in centre.
4 Let stand 10 minute.

I usually serve this with fruit, some field snaps, and maybe yeast rolls, too.

Oh I was just thinking about how I was in a homeschool slump this afternoon. Thought this was going to be about that! I live in a state of slumpy cooking, though, so no advice from me. We've been picking up the $5 pizza deals twice a week for about a month. That plus breakfast for dinner and my husband cooks on his two nights off has us covered for the week. Haha. <3 I love reading what you all eat, though!

Well we figured something out for now. I planned out some thing to get us through the next month.

DH and I made a large pot of chili, meatballs, taco meat for taco salad. I have hamburgers, ham sandwiches with tomato soup, asian chicken salad, chef salad.

I purchased a frozen pizza to have with salad. Frozen burritos to go with slaw. Whole roasted chicken with hummus and naan bread.

We also found some tri-tip in the freezer and are marinating it with our homemade teriyaki sauce, jalapeņos and green onions. It is this some asian-mex hybrid. I'll serve it with with rice or tortillas, pico de gallo, and slices of limes. We will see how it turns out tomorrow.

Thanks for all of your suggestions. I am adding them to my list of things to try.
