What a great idea. But I would recommend making sure that some ingredients are organic. I've only started a little canning this year. Sad that the makings of my childhood vanished in convenience items. I grew up making jellies, jams, syrups etc.

I would definitely use only organic and unwaxed produce. I think I'd have to change the name, too! :)

never heard of it, but i've seen recipes that use apple skins or citrus peel for the pectin

Tee-hee! Around here, apple peals and cores (except for the center bit with seeds) get run through the ducks and chickens before being added to the compost heap. Some how "Poultry Poop Jelly" seems even less appealing....:vomit:
