jello . . rice crispy treats made with gf rice crispies and dairy free margarine (which is hard to find, mostly just earth balance) . . . there's always fruit salad without bananas. you can also look for enjoy life products in the store - they are free of the top 8 allergens

I think the woman who was asking was going more for baking. She's a baker and really wants to make her son's speech therapist a cake or something. I should have mentioned that, I'm sorry. Thank you for the suggestions though.

One of these would probably be the simplest:No Butter Instructions - Betty Crocker (http://www.bettycrocker.com/products/glutenfree/no-butter-instructions)

As far as I can tell, the GF boxed mixes by Betty Crocker are free of dairy, nuts, and bananas, unless you add them yourself, hence the butter-free instructions in the link. I've made their cake and brownies before, very yummy.

We really like this applesauce cake made using a Namaste apple spice mix.

I also have a Coconut Lemon Meltaway recipe but I use a combination of almond flour and coconut flour. Possibly a different flour can be substituted for the almond flour?

Coconut-Lemon Meltaways
Dry Ingredients
1 & 1/2 cups Almond Flour
1 & 1/2 cups dried Shredded Unsweetened Coconut
1/3 c Coconut Flour
2 big pinches of Salt
Mix all of your dry ingredients together - set aside and move onto the next step.

Wet Ingredients
6 Tbsp Agave (or raw honey)
4 Tbsp Lemon Juice
2 tsp Vanilla
1 Tbsp Lemon zest
Mix together all of the above ingredients...

Mix wet and dry ingredients together.

The Thickener
1/4 cup AND 1 Tbsp melted Coconut Oil
Mix with wet and dry ingredients.

- Form small balls (or use cookie scoop).
- Place them on parchment paper lined cookie sheet.
- Warm them in the Oven (set at it's lowest heat, leaving the door cracked open) for approximately 1 hour.

Your finished Cookie will be dry on the outside and melt-in-your-mouth moist on the inside
